Leggenda was started by two childhood friends, Dudu and Uri, who by the chain's account learned from leading Italian chefs and opened their first gelato shop in Haifa in 2001; its branch list now names 25 branches, two of them in Afula. Its dairy gelato is made by traditional Italian methods and prepared fresh each day, its fruit sorbets are made from mineral water and real fruit in a process of more than 12 hours, and it serves a soft soy-based frozen dessert for vegans and people who avoid lactose. The yogurt bar has more than eight flavours on cow's milk, goat's milk or soy, or with no added sugar, and the shop makes Belgian waffles and French crêpes to order and serves coffee from northern Italy, ground for each order.
