A boutique winery in Arad's Artists' Quarter that makes small runs of white and red wine from desert vineyards, mostly around Mitzpe Ramon.
Midbar, Hebrew for desert, makes white and red wines in limited editions from vineyards in the desert, mainly around Mitzpe Ramon, 800 metres above sea level. Its site puts the character of the wine down to the dry air, the sharp swings between day and night and between winter and summer, the strong sun and the loess and limestone of the region. The winemaking is what it calls passive, with as little intervention as possible: cooling, long macerations and blending, each grape variety and each harvest batch handled on its own. The winery says it is kosher lemehadrin under the Arad rabbinate. Tours are arranged by WhatsApp or email, Arad's tourism site describes a visitor centre and a wine bar there, and the bottles are sold through the site at 85 to 180 shekels.
