A family winery founded in 1998 in the Martyrs' Forest by Eshtaol junction, pouring guided tastings on a terrace among its vines over the Judean Hills

Flam Winery was founded in 1998 by the brothers Golan and Gilad Flam with their mother, after Golan finished agriculture at the Hebrew University and studied winemaking in Piacenza, Italy; its first vintage, Flam Classico 1999, came out in 2000. In 2005 the family settled the winery in the Martyrs' Forest in the Judean Hills, where it built one of the first visitor centres in the area, renovated in 2021 to add tastings and workshops. Golan, its winemaker, grows the grapes in vineyards in Eshtaol, Givat Yeshayahu and the old terraces of Even Sapir, planted in 2019, and the wines go to more than 20 countries; the site says Flam Noble 2010 scored 93 from Robert Parker, and the winery was a founding partner of the Judean Hills Quartet. Visitors sit on a terrace among the vines for a guided tasting of four wines, or three premium ones, with local cheeses, spreads, olives and fresh bread, and the forest around it has walking and cycling trails and picnic spots.

The hours its listing on the council's tourism site gives; it is closed on Saturdays. The winery's own site says tastings, tours and workshops run through the week and on Fridays, booked through its reservations page.
