Madeleine is a French boutique patisserie in the Hatzar HaKfar shopping centre of Kibbutz Kfar Etzion, with a wide range of pastries, pies and cakes. Its page on the Gush Etzion tourism site says its owner, Claude Ben Shimon, came to Israel from France with his wife more than 20 years ago, after a career in pastry that took in opening shop branches in Israel and the United States, a cooking and pastry school of his own and the Waldorf Astoria hotel. During the coronavirus period he was offered a café in Kfar Etzion and opened the patisserie there, his wife's dream.
