Marcus Winery has made wine by hand in Moshav Kfar Monash since 2002, from grapes brought from chosen vineyards across the country. It picks by hand, ferments each variety with its own choice of yeasts, builds the blends before the wine goes into barrels and ages it long in new barrels and again in the bottle; it makes up to five wines a year and keeps no fixed list, changing it each year like a chef's menu. In the winery's yard it hosts groups for tastings, wine workshops and guided tastings with food from the region's producers, and every other Friday morning it opens for its wines poured by the winemaker beside a platter of boutique cheeses from the valley, booked ahead on its site. Wine can be ordered and collected at the winery or sent by the case anywhere in the country.
