Natuf is a boutique winery that Meir Akel and Zeev Tzinamon founded in 1997 in a farmyard in Moshav Kfar Truman, near Shoham: the farm's stable became the winery and its milking room the barrel store, and it takes its name from Wadi Natuf, which runs nearby. It makes red wines from noble varieties and blends, picked by hand from fixed plots in vineyards near the moshav in the Ayalon Valley lowland, aged 14 to 24 months in American or French oak and about two more years in the bottle, and bottled unfiltered; it makes about 4,000 bottles a year, as well as organic olive oil and olives. Its wines include HaNatufim (Cabernet Sauvignon with Petite Sirah), Sarah (a single-barrel Merlot), a Barbera, a Shiraz and Tempranillo, a Sauvignon Blanc from Mazkeret Batya and a Shiraz rosé from the Jezreel Valley. Groups and individuals visit by appointment in its visitor centre and yard, which also host private and business events during the week, and wine tastings are held on Saturdays.
