Aluma is a bistro in the centre of Tarshiha, the old village half of Ma'alot-Tarshiha in the Western Galilee. Its website says it has been cooking for more than twenty years and that its new restaurant is at 1 HaShuk Street, by the village market. It sets white tablecloths and good wine against the Galilee view, and its food is simple and careful, built on fresh local produce. The menu runs from a kohlrabi carpaccio and aubergine charred over an open flame to sheikh al-mahshi, courgettes stuffed with beef and pine nuts and cooked in goat's yogurt, then gnocchi with chestnut butter and truffle, black pasta with squid and shrimp, sea bass, entrecôte, beef fillet and lamb chops. It also hosts events, and takes table bookings by phone and through its website.
