Nalchik is a restaurant and a museum of Circassian heritage in the village of Rehaniya. By its own account Hani Madaji, a former Border Police officer, decided in 2013 to make his heritage his life's work, and the kitchen follows Grandma Yusra: the dough is folded by hand, the cheeses are local and the cooking is slow, in dishes such as kulak, soft dumplings filled with a chickpea stew under a sour yogurt sauce, majmak, a lentil stew for dipping, and chibureki, thin fried pastries filled with minced veal. The museum tells the history of the Circassian people through costumes, tools and stories; a visit includes a guide, and groups of more than ten can add a tour of the village lanes, by arrangement. Its site quotes mako's food writer calling it a simple but precious pearl of the Upper Galilee, and a ynet article that took in Israel's two Circassian villages, Rehaniya and Kafr Kama.
