Wolfson is a family confectionery in Shlomi's industrial zone, set up in 1999 by a family that had come to Shlomi from the Soviet Union in 1995, and named after the founder's grandmother, Olga Wolfson. Its site says the recipes were developed by the founder's mother, Larisa, which is why its cakes and cookies taste home-baked, and that everything is made without preservatives or artificial flavourings and colourings. It makes meringue cakes, cream cakes and charlottes, premium cookies and cookies filled with dulce de leche, and sells them to food chains, restaurants and shops. On Independence Day 2005, by its own account, a rocket fired from Lebanon destroyed its building; three months later production started again in a new, larger building, which has a factory shop where people from across the area come to buy and order.
