Ayalon Winery is the winery of Chipis, the family farm that Yoel and Naomi Biton keep at 10 HaMeyasdim Street in Moshav Sho'eva. Its site says it was founded in 2012 by childhood friends, Yoel, Naomi and Tzuriel Benizri, who learned the basics of winemaking from Naomi's father, and that it now makes about 5,000 litres a year from grapes picked by hand in vineyards of the Judean hills and their slopes, aged in oak barrels and bottled as blends or single-variety wines. The site's shop sells a Chardonnay, a Caladoc rosé and a Merlot and Cabernet red at 90 shekels a bottle, beside the farm's honey, olives, olive oil and gift boxes. Tasting tours are arranged for groups as part of a visit to the farm, which also hosts meals and small events in its yard, and the site says its wines have won medals at a competition held in Tuscany.
