Alto is the family dairy of Ariel, a member of Kibbutz Shomrat who began as a cheesemaker in the kibbutz's small dairy, and its site says the name, meaning high, is what it aims for. It makes cheeses from Galilee goat milk, from fresh low-fat cheeses, labneh and a thick yoghurt to hard cheeses aged for three to eighteen months and French-style ripened cheeses, and sells them in a deli in the building that was once the kibbutz kitchen, beside sourdough loaves from its own bakery, opened during the pandemic, and Galilee wine, olive oil and preserves. The café is reached by a path through an orchard and a lawn with seats under olive and mulberry trees, up to a wide wooden balcony and a bright room with a large window onto the cheese-making hall. It works by self-service, with a dairy breakfast menu built on its own cheeses, sourdough sandwiches, croissants, quiches, cakes and its goat-yoghurt ice cream, and a special menu on Fridays.
