The estate winery of Kibbutz Tzuba in the Jerusalem hills, making its wines only from the kibbutz's own vineyards, with a visitor centre beside a winepress of First Temple times

Tzuba Winery was founded in 2005 on the kibbutz whose first 100 dunams of vines were planted in 1996 by Paul Dove, who came from Cape Town that summer, managed the vineyard for nine years and became the winemaker two years after the winery opened. It makes about 60,000 bottles a year, each series from a single vineyard and each varietal wine from one variety, only from the kibbutz's own 450 dunams of terra rossa vineyards at about 730 metres, picked at night and aged 8 to 18 months in French oak: Cabernet Sauvignon, Merlot, Malbec, Cabernet Franc and Shiraz, Chardonnay, Sauvignon Blanc and Semillon. The visitor centre looks over the Jerusalem hills beside an ancient winepress, and its guided tasting pours four wines, with pizzas, focaccia, burrata salad, beetroot carpaccio and a cheese platter to order; groups of more than 30 can book chef's meals. On Thursday evenings it stages the Tzuba Nights shows of live music, and its September 2026 programme listed a wine bar on Tuesday evenings.
