The Hummus Eliyahu chain started in Yokneam: its site says Eliyahu Shmueli set out in 2008 to find the perfect hummus and opened his first restaurant here, a small hummus place that became a stop for guests from all over the country. The chickpeas are Israeli, cooked every day and ground on the spot in front of diners with his own tahini, local olive oil and spices kept secret, and served with fresh Yemeni pita, onion, pickles, tomato and hot pepper. The menu runs from hummus with spices, ful, mushrooms or egg to masabacha, sabich, shakshuka, a vegan shawarma hummus, salads and falafel, and the restaurant refills hummus and lemonade. The brand now lists 56 restaurants; the Yokneam branch is at the Delek fuel station in the industrial park and is open Sunday to Thursday from 09:00 to 19:00 and on Friday from 08:30 to 14:00.
