The chain's site tells how Eliyahu Shmueli set out in 2008 to find the perfect hummus and opened his first small hummus restaurant in Yokne'am: Israeli chickpeas cooked every day and ground on the spot in front of the customers with the chain's own tahini, Israeli olive oil and spices, served with a fresh Yemenite pita, onion, pickles, tomato and hot pepper. The menu is hummus with toppings, from plain chickpeas, tahini or fava beans to mushrooms, sabich, shakshuka, vegan shawarma and mashawsha, beside salads, shakshuka, chips and falafel, with lemonade and a malabi to finish. The site says hummus and lemonade are refilled, and that a meal ends with coffee and biscuits. The branch is open Sunday to Thursday from 10:00 to 18:00 and on Friday until 14:30.
