Sombrero is a chain built around the tortilla: by its own account its founder came home from a long trip through Latin America set on bringing the dish with him, and the first branch opened in 2010. The kitchens are open to the counter, so each tortilla is put together in front of the customer, and the chain says its vegetables are cut fresh several times a day. Its site lists nine branches, most of them in the south, from Beersheba and Netivot to Yeruham and Dimona. The Dimona branch is on Mem-Gimel HaMa'apilim Street and takes orders by phone and through the chain's ordering page.
