De Karina makes its chocolate by hand in Kibbutz Ein Zivan, from classic European recipes that its site says Karina Chaplinsky inherited from her grandfather and her father brought South American flair to, a family tradition of more than a hundred years. Its site says she holds three degrees in chemistry and nutrition and aims for natural ingredients in place of industrial ones. The range runs to pralines, truffles, milk, white, dark and vegan chocolate and chocolate liqueurs, with flavours such as olive oil with cocoa, cardamom with coffee and honey with spices, and gift boxes that are sent across the country. At the visitors' centre a visit takes in a film on the history of chocolate, a tasting room and a workshop where each guest fills, decorates and takes home their own chocolates; children join from the age of 3. The café serves a chocolate menu of hot and iced chocolate, milkshakes made with fresh cream ice cream, its Copa Karina and an Explosion waffle, and needs no booking.
