Zauberman is a boutique winery that has worked in Gedera since 1999, at 50 Pines Street. It belongs to three friends: Itzik Zauberman, the founder, a businessman; Raz Dahan, an architect; and Sharon Nahum, a property developer and the son of a family of vine growers. Its site says they made their own reading of the old Amarone method, fitted to the local climate: the grapes grow in one partner's vineyard in Kfar Ahim, are picked by hand by the owners and their families and dried before fermenting, and the wine ages in new barrels, the Cabernet Sauvignon for three to four years. That yields 1,000 to 8,000 bottles a year at 15.5 to 17.5 percent alcohol, sold, by its account, in a small number of shops and a few luxury restaurants.
