SPHERA is a winery devoted to white wine, the family project of the winemaker Doron Rav Hon, who studied winemaking in Burgundy, trained at Domaine Jacques Prieur and completed internships in sparkling wine in Champagne, and Sima Rav Hon, who runs the winery's activity and its brand. Its flagship White Concepts series spans single-variety whites, blends and sparkling wines, beside a numbered White Signature edition, and its vineyards in Givat Yeshayahu grow Chardonnay, Chenin Blanc, Semillon, Roussanne and Riesling along Nahal Hakhlil and Nahal Shua. Visits are by appointment only: the White Tasting pours three White Concepts wines beside a tray of local delicacies, a private tasting room takes small groups of friends and family, and vineyard tours for ten or more cost 220 shekels a person. A picnic pack of a bottle, two glasses, sheep's cheeses, handmade bread and dips can be ordered ahead by phone, and the winery is one of the Judean Hills Quartet, four wineries that run joint tours.
