DAW is a small dairy and fish tasting restaurant in the Ganei Ayalon neighbourhood of Lod, run by chef Or. Its site says it opens its doors only twice a week, to no more than 24 diners an evening, and that every dish is cooked over the fire in an open kitchen in front of the guests. Each evening starts at a set time and lasts about two and a half hours, through ten courses that change with the season and the produce, among them yellowtail ceviche, red tuna tartare and fish in crisp tempura. The chef, born and raised in France, trained in cooking and pastry at the Danone school, did a stage at Guefen in Paris and spent five years cooking at private events; he says his kitchen draws on the Mediterranean, Morocco and France. It is kosher under the Lod rabbinate.
