8 HaMeyasdim Street, in the museum compound, Mazkeret Batya

A chef's restaurant in a restored building over a century old in the museum compound of Mazkeret Batya, cooking seasonal Israeli food from the farms of the Judean lowlands.

Rubida is at 8 HaMeyasdim Street, in the museum compound. Its site says it sits in a listed building more than 100 years old, carefully renovated to keep its history and character, with a warm room of wood and stone, rare vintage furniture and a modern open kitchen, and a courtyard with a blooming garden and plenty of seats. Chef Amos Hayon, the owner, is self-taught and grew up in leading New York kitchens beside Michelin-starred chefs; here he cooks every day with what the land gives, a new Israeli cuisine with flavours from Italy, Spain, Greece, Turkey and Israel, rich in vegetables, fruit, fish and local olive oil, beside a list of wines from Israeli boutique wineries. Its menu names its partner growers, among them the Arkin farm in Mazkeret Batya for oranges and pomegranates. Breakfast is served on Friday only, a tasting menu runs from Sunday to Thursday, and the site asks guests to book ahead.
