Slow Dining is the restaurant of the Slowness guesthouse at Kibbutz Moran, run by chef Nitai Yahalom and open all week to the public. Its menu is built on fish and fresh pasta and on seasonal produce from the growers and fields around, in what its page calls a free kitchen that changes with the seasons and speaks of the place and the people who work in it. It sits in the old building of the kibbutz dining hall, which was renovated from the foundations, with an eclectic design: an open kitchen, tables beside sofas and low seating corners, a long shared table and a big bar, and good music always playing. Brunch is served every day until 15:00, and dinner from 18:00. In between it is a café: people sit over coffee, work in the lounge, or start the evening in the afternoon with cocktails, wine from the wineries nearby and good things from its deli.
