Vtopia Market is a boutique deli that is 100 per cent vegan, at the entrance to the Ahuzat Rishonim centre on HaNachshol Street, and its site says its owners opened it in 2017, after becoming vegan, to find the food they grew up on. At its heart are the cheese substitutes it makes itself: a spirulina "roquefort", fromage, mozzarella, cashew and soy spreads, labneh and feta. It also makes frozen ravioli, lasagnes, quiches, schnitzels, kebabs and kubbeh, sells ready home cooking to take away during the week, and on Friday adds a stand of stews, pastries and desserts. The rest of the shop stocks meat and cheese substitutes, vegan ice creams, gluten-free foods and natural cosmetics.
