17 Moshav Tal Shahar, the Zaban farm, Tal Shahar

A family goat farm and boutique dairy at Moshav Tal Shahar, with a visitor centre, a cheese deli and a small café, and cheese-making workshops

Iza Pziza is the Zaban family's goat farm at Moshav Tal Shahar, in the Sorek valley below the Jerusalem hills, which began with 25 young goats in July 2005 and now keeps about 100. The boutique dairy turns the farm's own milk into yogurts, spreads and fresh, semi-hard and aged goat's cheeses without preservatives, and farm owner Alon Zaban runs professional cheesemaking courses for small groups. The cheese deli makes up cheese meals with vegetables, sourdough bread, dips, jam and olives, and sells wine, olive oil, honey and tahini to take home or for a picnic on the lawn. Families can tour the pen, pet and feed the goats and make a Circassian-style cheese of their own, and kidding season runs from winter to the end of spring.
