Its website says Cardinal began in 2003 as the idea of Eli Trab, a young chocolatier from Haifa with a background in drawing and goldsmithing, who started with English toffee and later chose Valrhona chocolate as his only raw material. It says the first Cardinal opened in 2006 near Rabin Square and the chocolaterie on Shenkin Street opened in 2019. The shop has a rich display of pralines, chocolate bars and sheets and gift packaging, with a small glass kitchen in the middle where the chocolate is made in front of customers.
