Cucina Hess 4 is the boutique restaurant of chef Tamar Cohen-Tzedek, at 4 Hess Street. Its site says the menu is made entirely by hand and draws on the regions of Italy, above all Emilia-Romagna in the north: traditional dishes in her own reading, built on seasonal produce and traditional cooking techniques. She learned the Italian kitchen over about five years in Michelin-starred restaurants and country trattorias in Italy, the site says, and on her return opened Vince and Tamar, which later became Cucina Tamar. The restaurant also sells its fresh pastas, sauces and lasagnes to take home, a larder it calls the Dispensa. It opens in the evening, from Monday to Thursday.
