A fruit-processing house in the Yad HaShmona industrial area that turns apples and pears rejected for market into juices, alcoholic ciders and vinegar, with tasting tours on Fridays

Hamatsesa began in 2013, when Tomer Tzur worked in the orchards of Kibbutz Tzuba and saw thousands of apples and pears left on the trees or rejected at the packing house for their size, a small picking bruise or uneven colour; by its account about a fifth of the crop is turned away. It buys that fruit from farmers around Israel, Israeli fruit only and no imported juice, and makes natural juices and, after a long stretch of learning, bottle-fermented alcoholic ciders whose sparkle, like champagne's, comes from the yeast, with no processed sugar or artificial flavourings; the range also takes in apple vinegar, distillates, tamad and gift packs, sold in its online shop and sent across the country. At its visitor centre in Yad HaShmona a tasting tour tells the story, explains how the ciders are made and pours its ciders, juices and cocktails; the tours suit children from age 7 and run on Fridays at 10:00, 11:30 and 13:00, with other times arranged by contact.
