This is the Beit She'an branch of Hummus Eliyahu, a chain that by its own account began in 2008, when Eliyahu Shmueli set out to find the perfect hummus, and opened its first restaurant in Yokneam. The chickpeas are Israeli and cooked every day, then ground on site in front of the diners with his own tahini, local olive oil and spices, and served with a fresh Yemeni pita, onion, pickles, tomato and hot pepper. The chain refills the hummus and the lemonade, and ends the meal with coffee and wafers. Besides the plates of hummus there are salads, shakshuka, falafel and malabi, and salads and tahini to take home. The branch is on HaYetsira Street in the northern industrial area, open Sunday to Thursday and on Friday until 14:30, and the chain lists its kashrut as mehadrin.
