A family challah bakery in Pardes Katz whose factory shop on HaRav Kahaneman Street stays open from Saturday night until Shabbat

HaZvi Bakery was founded in Bnei Brak in 1994 by Tzvi and Hani Cohen, and Hani Cohen runs it today. By its own account it carries on the traditions and flavours of the family home of the late Yehuda Cohen, who founded the Vizhnitz bakery in Makó, Hungary, in 1935 and later brought it to Bnei Brak; at its heart is the family challah recipe, kept secret for generations. All its challot are vegan and come in many sizes and shapes, from numbers and hearts to tefillin, and it sells 3.5 kg portions of dough for separating challah at home. Beside the challot it bakes rolls, dairy and parve cakes and pastries, cookies, old-style doughnuts and hamantaschen, with products with no added sugar or made with wholemeal flour, and it also sells hot cholent and kugel. Its ovens, built for the bakery, burn 24 hours a day, and its goods are sold in its factory shop, in its other shops in Bnei Brak and at points of sale across the country.
