Behor et Shoshi is a Tripolitan restaurant in Pardes Katz, run by a father and daughter, Behor and Shoshi, and this is its home branch. By its own account Behor started out at a small stall in the Pardes Katz market, making Tripolitan bourek for passers-by, and in 1966 opened a small workers' restaurant that fed the people of the nearby market, cooking one dish a day; the menu grew until every dish was served every day. The kitchen is known for its couscous, vegetarian or with chicken or beef, and cooks mafroum, rice with beans, meat stews with vegetables and chickpeas, fish chraime, chicken patties and a special for each day of the week. Business lunches come with thick slices of bread, pickles, chirshi (a Tripolitan pumpkin salad) and a side of your choice. It is open for lunch, Sunday to Thursday until 16:30 and on Friday until 14:00, and it delivers through its own ordering page.
