A boutique sheep's-cheese dairy in a flowering yard in moshav Nordia, making about 80 cheeses from the milk of the moshav's flock, with tastings and workshops by appointment.

HaShukiya is a boutique dairy in a tended, flowering yard in moshav Nordia, where the cheesemaker Shuka Karmeli makes every cheese by hand from the milk of the sheep raised in the moshav, after training in France, Italy, Spain and England. It makes about 80 kinds: soft cheeses such as Tzfatit and Circassian, semi-hard ones such as Arbolino and Caprino, hard cheeses in the style of pecorino, Manchego, Gouda and Parmesan, moulded cheeses, Greek-style yogurt, labneh and a sheep's-milk malabi, and its page on the council's tourism site says the cheeses age in a 'cave' built in the yard. It hosts groups of up to 25 for tastings of its cheeses with a rich salad, country bread and wine, a talk on the world of cheese and cheesemaking workshops, in its yard or at the client's, and makes cheese platters to order as holiday gifts. Visits are by appointment only, and orders can be collected.
