A gelato house on HaOranim Street that makes its ice cream on site from local farmers' and producers' ingredients
Shamna opened on HaOranim Street in August 2025. It is run by Yair Roth and Liad Shmueli, who had spent some years making ice cream for restaurants and delis as Studio Gelato, and its name is short for the Aramaic shamna ve-salta, the cream of the crop. The ice cream is made daily in a kitchen behind glass, from produce that comes straight from farmers and producers, and the counter holds about 22 flavours that change with the season, from labneh with olive oil and za'atar cookies to citrus and chili; by Roth's account mascarpone is the best seller. Nothing is disposable: the tasting spoons are metal, the ice cream comes in chilled stainless-steel cups, and a cone goes to whoever insists. A pastry chef bakes the toppings and a tiramisu that people come for on its own. There has been a queue from the start: ynet reported the ice cream selling out by seven in the evening in its first weeks, and mako found the place full on the coldest winter days. Maariv's critic called it the best ice cream she had tasted in Israel.
