In the heart of the market on Jabotinsky Street, the town's tourism site finds a little corner of Turkey: flaky bourekas filled with cheese, spinach or potato, served with sliced hard-boiled egg and hot sauce, with cold laban and lemonade on the side. The Holo family makes the filo dough to a traditional Turkish recipe the grandfather brought from Turkey, and fills it with fresh chard bought at a stall nearby. Maariv visited in May 2025 and called it the original Ramla bourekas, the place Bourekas Baba began before it grew into a chain across the country: people crowd the counter for takeaway bags of hot bourekas, and inside a small room of narrow stainless-steel tables feels like a workers' restaurant, where bourekas come with egg, pickles, olives and salsa, lemonade is made on the spot and the hot sauce comes in a squeeze bottle. A day later Maariv's Nir Kipnis wrote that it might be the best bourekas in Israel.
