A family buffalo farm and dairy at the edge of moshav Bitzaron, the first in Israel to make cheese from buffalo milk, with a farm shop, a visitor centre and a tasting meal for two

The Buffalo Farm is the work of Hagai and Irit Treister, who, its site says, tasted buffalo yogurt on a trip to Italy and went from one government office and council to another until a young buffalo herd arrived in Israel in 1995 and the dairy opened in moshav Bitzaron, near Gedera. The family learned to make the cheeses in dairies in Latina and Campania, and the dairy makes mozzarella, ricotta, soft cheeses, labneh, Safed-style cheese and yogurts from the herd's milk; a new barn for the herd was built at the end of 2010, and the extended family works on the farm. The shop beside the dairy sells the whole range with ripened cheeses from local dairies, pasta, wine, olive oil, olives and antipasti, and a frozen buffalo yogurt that its site says is sold only there; customers who arrive while the ricotta is being made get it warm. The yard has tables and benches for eating on the spot, children can watch the buffalo, a tasting meal for two is served every day until 13:00, and the visitor centre, by booking, shows a short film, serves a tasting and takes visitors to the barn with the farmer.
