Lasha is a boutique bakery on Har Boker Street, in the Spice Route Quarter, that bakes health breads, sourdoughs and whole-grain loaves by slow, traditional methods, with pastries it calls in the spirit of the desert. The shop at the front of the bakery sells its breads, cakes, cookies, savoury pastries and fresh salads alongside delicacies from small producers, and serves coffee with a choice of plant milks and vegan and vegetarian pastries; people sit outside, take food away or have it delivered around the Negev Highlands. By its own account the bakery grew into a teaching centre, where groups from Israel and abroad come for in-depth courses and workshops of a few hours on sourdough and yeast. It also caters events and packs sandwiches for hikers.
