BOTZ serves meals that, in its own words, bring guests, chefs, farmers and local producers together and tell the story of the desert: of arid land and the rare produce born of it, transformed over open fire. Its chefs, Tal Ashkenazi and Omer Seltzer, combine traditional cooking techniques born in the region with contemporary ones gathered around the world. Its booking page gives evenings with an open menu, from which dishes are ordered freely, a full tasting dinner of 14 courses on Thursdays, and lunch on Fridays from 12:00 to 16:00 in its wine yard, with a menu for the time of day and a selection of its wines. The bistro menu runs from embers-baked sourdough naan and fatteh to chicken sofrito with kohlrabi and buckwheat pici with chicken hearts.
