Les is chef Yakir Masrati's restaurant and wine yard in Carasso Science Park in Beer Sheva's Old City, on Hativat HaNegev Street across from Southern Command. mako wrote that it is named after the loess soil of the Negev, and its Instagram name adds "wine, food, earth". Masrati ran HaOtentit in the city for a decade; he told mako it had 300 seats and 60 staff, and it closed at the end of 2024. He opened Les in June 2025; it closed soon after, when the war with Iran broke out, and was open again by late July, when Maariv called it the first kosher chef restaurant in Beer Sheva. Maariv placed it in the old Turkish building that was once a school for sheikhs: the Ottoman building put up in 1914 as a school for Bedouin children, part of the science park since 2013. Channel 13 described a restored Ottoman building with a glass one beside it. Inside, mako and Maariv counted 30 seats, cloth napkins and Riedel crystal glasses, and mako a hidden private room made into a cigar lounge with leather sofas and Afghan rugs. Outside is a wine yard with 150 barrels, vines and greenery, where the barrels serve as high tables. The kitchen cooks from local produce and the wine list is Israeli only; mako reported that Yiftach Tzabari, HaOtentit's sommelier, built it. In October 2026 Walla wrote of medium-sized plates for sharing, such as a taco of Kalamata olive dough with beef tartare and balsamic caviar, a potato and truffle borek with egg yolk, tahini and lemon harissa, Yemenite lachuch with confit goose, a dish Masrati brought from HaOtentit, and long-cooked asado on a potato gratin, with main courses at 94 to 179 shekels. It has hosted special evenings: in July 2025 a memorial evening for Lior Takatz, murdered at the Nova festival, with a food truck in his memory, and on 20 July 2025 a dinner of the Chaîne des Rôtisseurs.

Sources disagree on these hours

These are the hours on its booking page on Tabit, which takes no bookings on Sunday. Channel 13 printed Monday to Thursday 18:00 to 23:00 in August 2025, and mako's report on its opening in June 2025 gave Sunday to Thursday 18:00 to midnight. For Friday the Tabit schedule lists 11:00 to 17:00 but the page takes no Friday bookings, and for Saturday it lists 18:00 to 01:00 while taking bookings from 20:30; no other source gives times for either day. Maariv wrote in July 2025 that it seats by reservation only. Its listing on d.co.il gives daytime hours that are not the restaurant's.
