Kabab Emuna is the kebab grill the late Shimon Emuna opened on KKL Street in Beer Sheva's Old City, beside the old market: Israel Hayom and mako describe a small stand with four tables. Its logo says it has been there since 1958, as Israel Hayom and mako do, and Yedioth Ahronoth puts the opening at the end of 1958; ynet and mynet give 1959, and its own story page the 1960s. Shimon came to Israel from Iran, born in Abadan by Yedioth's account, and wrote the kebab recipe; moshav farmers and Bedouin who came to shop at the market were its first customers, ynet wrote in 2021. He retired at 77, and his son Amnon Emuna, who was three when the stand opened, runs it with his wife: mynet called him the owner and manager in 2024, and Yedioth wrote that year that Nadav Shemesh had been its grill man for 20 years. The recipe has not changed. The kebabs are a little bigger than a finger, four to a portion, grilled about 7 centimetres above citrus-wood coals, Yedioth wrote, and come in a laffa, a pita or a baguette or on a plate, with salads from the counter, chips and pickles; there are also chicken thigh, chicken liver, hearts, turkey and entrecôte skewers and a hamburger. The stand grew into a restaurant of two air-conditioned rooms that faces the Old City's pedestrian street, with seats inside and out, and Israel Hayom wrote in 2025 that it feeds hundreds of people a day. Amnon has turned down offers of branches and franchises on his father's advice, ynet reported, so there is one Kabab Emuna. ynet wrote in 2021 that it is considered the best kebab in the country, mako put it among the 20 best skewer grills in Israel in 2024, Israel Hayom named it one of Beer Sheva's two kebab institutions in 2025, Channel 13 included it among seven Beer Sheva restaurants in August 2025, and mako's 2026 street-food list names it among the city's institutions. It is kosher under the Beer Sheva religious council, takes delivery and pick-up orders on its own website, and opens Sunday to Thursday.

These are the hours on its Google listing, as Wanderlog copies it, which has it closed on Friday and Saturday. Its website's contact page gives Sunday to Thursday 9:00 to 18:00 and Friday closed, while the notice on its home page for the intermediate days of Sukkot 2026 says it will close at 18:00 on each of those days. Channel 13 printed Sunday to Thursday 10:00 to 22:00 in August 2025; Israel Hayom printed 09:00 to 18:00, and Friday 09:00 to 14:00, in February 2025; the city's tourism site gives 10:00 to 18:00.
