Mousseline was founded by Orit Vardi, who learned the craft at the Ecole Lenôtre school of gastronomy in Paris, and its site calls its bent plainly French. The ice cream is made from milk, cream and egg yolks, with real Belgian chocolate, bourbon vanilla pods from Madagascar, hazelnut paste and arabica espresso; the sorbets are made from fresh fruit that is peeled, cut, squeezed and strained on the premises, some of it brought straight from growers. Beside vanilla, coffee and chocolate it sells flavours such as black sesame, matcha, wasabi, saffron and masala, and sorbets of grapefruit with basil, sour cherry and lemon with mint. The shop at 2 HaArmonim Street stands in Mahane Yehuda market; there is a second shop at 10 HaNasi Street, a third in Beit HaKerem and a factory shop in Talpiot. Ice cream can be ordered by phone from each shop, on 1-700-502-722.
