An Italian restaurant and pizza bar on Rothschild Street, opened in 2020 by pizzaiolo Gilad Solomon, with taboun pizzas, fresh pasta, breakfast and cocktails until late at night

JAJA is an Italian restaurant and pizza bar at 86 Rothschild Street, on the corner of Gordon Street, in the centre of Rishon LeZion. By its own account it began with pizza evenings that Gilad Solomon held for friends on Thursdays in his yard. Solomon, who has worked with dough for twenty years, started as a baker at Lechem and served as its development manager, and in 2020 he opened JAJA with his cousin Barak Birnbaum, the former owner of the veteran Auto Bar. Solomon, who won the title of Israel's pizzaiolo for 2019, writes the sauces and makes the dough himself, from Italian flour with biga and sourdough, which by his account ages for 96 hours before it goes into the taboun. The menu runs from house focaccia and a manouri pastry, the subject of a Channel 13 piece in 2023 headlined that people come from all over the country for it, through red, white and vegan pizzas and fresh pasta with a choice of sauces, to a Nutella calzone, with cocktails and wine at the bar; in the morning there is a breakfast menu of shakshuka, croissant pastries and sandwiches on Italian schiacciata. In 2024 the place was renovated from the ground up, and Israel Hayom wrote in 2025 that it had become an Italian-inspired bistro. mako's Lin Levi put it on her list of Israel's best Italian restaurants for 2025 and called the atmosphere family and neighbourly, and ynet included it in February 2026 among the tastiest pizzas in the country. It is open on Saturday too, with a DJ on Thursday and Saturday evenings, and its website announces a second branch, in Be'er Ya'akov, opening soon.

Monday to Friday as its booking page on Ontopo, which its website links for table bookings, gives them for the coming week: Monday to Wednesday 09:00 to 00:30, Thursday 09:00 to 01:30 and Friday 09:00 to 01:00, with brunch until 12:30 and a DJ from 20:00 on Thursday and Saturday. Its menu of May 2026 serves breakfast from Monday to Friday 09:00 to 13:00 and on Saturday 10:00 to 13:00, and its Google listing, as Wanderlog copies it, also opens at 10:00 on Saturday; its booking page takes Saturday tables from 11:00. Sunday is not confirmed: the English contact page of its website and its booking page say it is closed on Sunday, while the Hebrew pages of its website say it is open every day from 10:00 to 01:30, its Google listing gives Sunday 12:00 to 01:00, and Israel Hayom printed Sunday hours in June 2025. Its website also gives Saturday from 09:00 to 01:00, and its English pages Thursday and Friday until 03:00; its Google listing closes at 01:00 from Monday to Wednesday and at 02:00 on Thursday and Friday.
