The first shop of the Kiortosh bakeries, opened on Bograshov Street in 2006, baking the hollow Hungarian chimney cake on wooden spits

Kiortosh began in the winter of 2006 in this shop at 39 Bograshov Street. Its site says chef Doron Regev, a pastry chef of 36 years and the son of a Hungarian father, found the kürtőskalács on a roots trip to a small Transylvanian town, bought the recipe from an old woman and spent months adapting the dough to Israeli taste. The kiortosh is a hollow, caramel-coated yeast pastry baked on a wooden spit in a special oven and finished with different coatings; the shop also sells cakes, biscuits, pastries and coffee. After a year on Bograshov the business grew into a chain of six shops, its goods made by hand in its own factory.
