A fourth-generation family bakery in Jaffa, making Balkan filo pastries by hand since 1948

Leon Bakery's story begins in 1948, when grandmother Julie came to Israel from Bulgaria with the craft of hand-stretched filo dough, and its site says she was the only woman in the country working that way. In a small house in Jaffa she stretched the dough over every bed and table, with her son Leon at her side; he later opened a shop in Jaffa, and his sons Avi and Eli joined and widened the production. Four generations on, the bakery makes Balkan filo pastries by hand, with no margarine at all and fillings it puts at 70 per cent. It also supplies cafés, bakeries, restaurants and caterers, and offers tours and tastings at its factory in Jaffa.
