Hanan Margilan is a Bukharan family restaurant in the heart of the Shapira quarter in south Tel Aviv. Time Out reported in August 2022 that its owner, Arthur Hanimov, founded it in 2007 with his mother Ziva, its head cook; mako's list of kosher restaurants put it at more than 20 years old in July 2026 and wrote of recipes handed down in the family. Arthur Hanimov told Time Out in May 2022 that its meat comes from a butcher in the Hatikva market and all its vegetables from a greengrocer there. In September 2022, after 15 years, it gave up its evening shift and began closing at 18:00 instead of 22:00. Time Out's Niv Tobul wrote in 2022 that it sits in a building designed like an events hall of the 1980s. The cooking is classic Bukharan. The press singles out the dushpara, small dumplings filled with beef in a beef broth under plenty of parsley, and the kebab, which Time Out priced at 36 shekels a skewer in February 2025 and which Udi Romanovsky, a co-owner of Nini Hachi, called the best in Tel Aviv. Beside them come manti, lagman, chebureki, onions stuffed with beef in a cinnamon-scented broth, gozgiza (pastries baked with beef and lamb fat), the rice dishes oshpalov and bakhsh, skewers from the charcoal grill and stews that change with the seasons; in July 2026 Time Out put its thick-cut fries, served on paper with coriander and garlic, on its list of the city's best. Time Out wrote in 2022 that it has never advertised, and chefs eat there: that July Time Out's column on where the city's chefs eat found it their favourite, in 2019 chef Ruti Russo chose it for her Time Out interview, and in November 2022 Arthur Hanimov cooked with chef Yuval Ben Neriah at Taizu for the Israeli Cuisine Festival. It was a finalist for Time Out's 2015 award for the best restaurant of traditional community cooking, mako called it the model Bukharan restaurant in 2022, and Time Out has kept it on its lists of the best restaurants in south Tel Aviv (2025), the city's best kosher restaurants (2025) and its best casual restaurants (June 2026). It is kosher and meat, under the Tel Aviv-Yafo rabbinate.
