5. מדידת האפר והחלבון בקמח
(א)מדידת האפר היבש בקמח תיעשה על־ידי שריפת הקמח בטמפרטורה של 580°C עד שיתקבל אפר שצבעו אפור בהיר (משך השריפה כ־6 שעות).
(ב)מדידת החלבון בקמח תיעשה לפי שיטת קילדאל עם גפרת נחושת כקטליזטור.
