Café HaTzvi opened in 2018 as the first café in the Artists' Stables, the old farm buildings of Pardes Hanna's agricultural school, and its chef told Walla it started as a food truck on bare sand. The brothers Yaniv and Nir Weiman run it; Nir was the chef and owner of Mel & Michel, a small Italian restaurant in Tel Aviv that closed after 13 years. The press describes a dairy, vegetarian menu with a Mediterranean lean and plenty of vegan and gluten-free dishes: breakfast sandwiches, some with smoked salmon, shakshuka, a "Canaanite" plate of lentil hummus, tahini, crushed tomatoes and home-made schug, pasta and soups from midday, shakes and cakes. You order at the counter and sit inside or out, and on weekdays many tables hold laptops. On Friday afternoons a DJ plays in its courtyard, and the same owners run Hof HaTzvi, a food truck and bar beside it. In January 2026 The Jerusalem Post named "the veteran Cafe Hatzvi" among the compound's standout spots.

The café's own Instagram posts of November 2024 and January 2025 gave Sunday to Thursday 8:00 to 17:00 and Friday 8:00 to 16:00, and older directories give other times. It is closed on Saturday, as the whole Artists' Stables compound is on Shabbat.
