A contemporary Yemeni kitchen and bar, dairy and fish, in the old market of Pardes Hanna
Diwan is the contemporary Yemeni restaurant and bar of chef Roy Dori, who grew up in the area. He opened it in May 2026 with his partner Neta Eisenberg, in a former butcher's shop in Pardes Hanna's Old Market, an abandoned complex brought back to life. Dori, who is half Yemeni, built a dairy and fish menu on the cooking of Aden, the port city of southern Yemen: mukaskas, small fried pillows of dough, to open; a kubaneh tray with schug; lahoh with a fish skewer and fenugreek foam; a zurbian risotto with confit fish. The room has terracotta walls, an open kitchen in a glass cube and a taboon behind the bar, with seats outside and on a covered terrace. It opens in the evenings from Sunday to Thursday and for a Yemeni brunch on Friday, and in June Dori told ynet that 30 to 50 people were waiting for a table every day. Haaretz's critic called it one of the best restaurants to open in Israel recently.

Sources disagree on these hours
Its Instagram bio gives Sunday to Thursday 18:30 to 23:00, with a happy hour on Sunday from 18:00 to 19:00, and the part of the bio that shows does not mention Friday. Its booking page on Tabit, whose schedule was last changed on 14 September 2026, agrees and adds the Friday brunch from 11:00 to 15:30, the hours Globes printed in June; mako gave the brunch as 10:00 to 15:00 in May, and Walla as 10:00 to 16:00 in July.
