Palette is a French bistro on Jerusalem Boulevard in Jaffa, at the entrance of the Bazaar hotel and about 70 metres from the Shalma stop on the light rail's Red Line. By its own account it is an everyday Parisian bistro, and its booking page describes a journey that starts in the streets of Paris, among its old and lively bistros, and ends in the city's dark bars. It opened in 2025. In July of that year ynet's Tiki Golan found chef Roi Dori in its kitchen, who since the war had left the place he opened in the north, and its Tabit page still says that Dori, whose earlier kitchens include the Pra hotel, Mashya and L28, leads the menu; the brunch page on its website, last changed in June 2026, names Artyom Latvinov as Palette's chef. The menu is everyday French classics rethought for Israeli produce: sourdough bread with escargot butter, raw fish in brown butter, shrimp marinière, a crab bisque, agnolotti vichyssoise, steak haché seared over coals, veal cheek in jus and steak frites with gratin fries, then crêpe Suzette or a tarte Tatin baked to order, with cocktails at 43 or 52 shekels and a list of French wines. Its website gives the same menu for Saturday lunch, and every morning it serves breakfast: a main course with an open buffet and unlimited coffee or tea for 139 shekels. ynet praised its accessible bistro prices, its music and its sound, and told readers not to leave without the crêpe Suzette. Time Out opened its list of Jaffa restaurants with it in September 2025, calling it a meticulous Parisian bistro full of atmosphere, and wrote in December 2025 and again in June 2026 that at sunset it trades its painter's apron for a sparkling evening dress and becomes, between candlelight and the muezzin's call, a local, sensual version of the Paris of the Middle East. Walla's Yaniv Granot put it eighth of ten in November 2025: the kind of normal bistro found on almost every street in Western Europe and missing here until now, four and a half steps from the light rail. In the first half of 2026 it held a Friday party brunch, the Parisian Brunch Rave, with a DJ, a guest pastry chef and a buffet at 290 shekels a head; Time Out wrote in May 2026 that it ran every other Friday from 12:30 to 16:00, and the last date its page names is 19 June 2026.

The hours are the weekly schedule on its Tabit page, last changed on 24 May 2026: breakfast from 06:30 to 10:30, and from 07:00 to 11:00 on Friday and Saturday, and dinner from 18:00 to 23:30, from 17:00 on Friday and Saturday, with no dinner on Sunday. Its Tabit booking takes tables at the same times, until a quarter to midnight in the evening. On Saturday it also takes lunch bookings from 13:00, and its website has a Saturday lunch menu, while the schedule itself shows Saturday from 07:00 to 11:00 and from 17:00. Its website gives no hours.
