A boutique pizzeria on Marty Davis Street in Ashkelon that bakes Detroit-style pizzas from long-proofed sourdough

Taglio is a boutique pizzeria at 3 Marty Davis Street that, by its own account, specialises in two classic styles, Detroit and Roman. Its dough is sourdough made from a blend of Italian and Israeli flours and proofed cold for up to 72 hours, and its pizzas are rectangular Detroit-style trays topped with mozzarella, gouda and parmesan, in a personal size for one or two and a large size for two to four. The menu runs from a classic pizza to vodka sauce, anchovy, tuna with preserved lemon, roasted aubergine, artichoke alla romana and truffle with mushrooms. Its owner, Hai, writes that he has cooked and baked for more than 20 years and spent 14 years in high tech before coming back to Ashkelon to open it. It opens from noon on Sunday to Thursday, closes on Friday and opens again when Shabbat ends.
