Ronen Aflalo, a chocolatier and food technologist who has advised international companies on chocolate, set up the Israeli Chocolate Academy; his site says it began in the early 2000s, when he looked for professional knowledge about chocolate in Israel and found none. His about page says he won first place in the International Chocolate Awards in 2022, second place in 2018 and third place in 2016 and 2017. From unit 330 at 5 Korazin Street he sells pralines such as yuzu, salted caramel with blond chocolate, pistachio with espresso and a dark ganache with red fruit, boxes made up to order and chocolate branded for businesses, along with raw materials and professional equipment. The academy runs a professional chocolatier course, a praline course, a course for ice-cream makers and two-hour workshops, among them workshops for couples. It is on the Givatayim religious council's list of supervised businesses.
