Ahuzat Margo is a chef restaurant at 20 Yaakov Street in the historic heart of the old Rehovot colony, in Beit Yosefzon, which its site calls the first house of Rehovot. Its kitchen rests on classic southern French cooking given a modern reading: fresh and aged cuts of meat, long confit cooking and stocks made on the premises, with dishes such as goose leg confit, foie gras, beef fillet in Marsala and apple tarte Tatin. The wine list pairs Israeli boutique wines with a selection from the Old World. The house is divided into intimate rooms, with a roofed inner courtyard that is closed in winter and sunny in summer, and private rooms take events from eight diners. It is kosher under the Rehovot rabbinate, open for dinner from Sunday to Thursday and for lunch on Friday.
