Opa is the restaurant of chef Shirel Berger, who by its site began cooking at 12, graduated from the Culinary Institute of America in 2014, cooked in New York restaurants and has worked only with fruit and vegetables since returning to Tel Aviv in 2015. It serves a tasting menu of eleven sharing courses, each built around a single vegetable or fruit taken apart, using old and new techniques and the peels too, to cut food waste. The produce comes from local growers of organic and heritage varieties, several of whom the site names. The tasting menu is served on Tuesday and Wednesday at 19:30 and on Thursday at 19:00, its fermentation pantry opens on Monday from 12:00 to 18:00, and the restaurant is closed from Friday to Sunday.
